Freestyle Seasonal Salad
Ingredients
1 bunch of Curly Kale, cleaned and pieced into small-medium sized pieces
Your choice of seasonal veggies
Onions, chopped
Colorful Peppers, chopped
Cabbage, chopped
Broccoli, chopped
1 cup of cooked Fluffy Quinoa (see Bonus Recipe below)
1 cup of cooked Chickpeas (or your favorite plant based protein)
up to 1/2 tsp Garlic Powder
up to 1/2 tsp Onion Powder
up to 1 tsp of Sea Salt
Prep
Add chopped kale to a bowl.
Add in avocado salad.
Massage gently for a few minutes until leaves wilt.
Add chopped seasonal vegetables.
Add cooked grains (i.e quinoa), protein (i.e chickpeas).
Add seasonings, including onion powder, garlic powder and sea salt- if desired.
Taste, and season more to taste.
Garnish with micro sprouts and black pepper.
Add love and enjoy!
